Birria Turkey Quesadillas

Quesadilla-lovers and Thanksgiving turkey lovers are going to have a field day with our quesabirria tacos using all that leftover turkey. This recipe is a great combo for weekend lunch!

Ingredients
- 1 lb shredded cooked turkey
- 1 Birria Seasoning Bomb
- 8 small tortillas
- 1 cup shredded Mexican cheese (such as Oaxaca or Monterey Jack)
- 1 tablespoon olive oil
- 1 large yellow onion, diced
- 2 cups water
- 1 ½ teaspoons salt (to taste)
Instructions

Prepare the Turkey: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 4-5 minutes.

Add Seasoning Bomb: Drop the Birria Seasoning Bomb into the pot and stir until it dissolves and is well combined with the onions.

Combine Ingredients: Add the water and stir well to combine.

Simmer: Bring the mixture to a simmer over medium-high heat. Reduce the heat to low and let it simmer for 30 minutes.

Add Turkey: Stir in the shredded turkey. Continue to cook for another 20 minutes, until the turkey is warmed through and has absorbed the flavors.

Assemble the Quesabirria Tacos: Heat a skillet over medium heat. Place a tortilla in the skillet and sprinkle with shredded cheese. Add a generous amount of the turkey mixture on top of the cheese. Place another tortilla on top.

Cook the Quesadillas: Cook until the bottom tortilla is crispy and the cheese is melted, about 2-3 minutes. Flip and cook the other side until crispy.
- Serve: Cut the quesadillas into wedges and serve with your favorite toppings, such as salsa, guacamole, and sour cream.

- Customize Your Quesadillas: Add your favorite toppings like diced avocado, fresh cilantro, and a squeeze of lime juice to enhance the flavors.

Make It Easier: Use a slow cooker for this recipe by adding all ingredients to the Crock-Pot and cooking on high for four hours.
