Shredding the rotisserie chicken

Ingredients
● 1 lb ground chicken or shredded rotisserie chicken 
● 1 Pozole Verde Bomb 
● 1/2 cup chicken broth or water 
● 1/2 cup diced yellow onion
● 2 cloves garlic, minced
● 3 tablespoons olive oil
● 8 small corn tortillas
● 1 cup shredded cabbage or coleslaw mix
● 2 tbsp chopped cilantro
● Juice of 1 lime
● 1 tbsp mayonnaise or Greek yogurt
● Salt & pepper to taste
● Optional: queso fresco, pickled onions, avocado slices, radishes

Instructions
1. Cook the Aromatics: In a skillet, heat olive oil over medium heat. Add diced onion and garlic, and cook until soft and fragrant—about 5-7 minutes.

2. Add the Bomb: Drop in your Pozole Verde Bomb and stir until it melts into the onion mixture.

3. Make it Saucy: Add broth or water, stir well, and bring to a low simmer for 9-11 minutes. 

4. Add the Chicken: Stir in the ground or shredded chicken. Let everything simmer together for 10 minutes until well-coated and flavorful.

5. Make the Slaw: In a bowl, mix cabbage, cilantro, lime juice, mayo (or yogurt), salt, and pepper. Toss well and chill while you prep the tacos.

6. Assemble the Tacos: Warm tortillas on a dry skillet. Fill with the verde chicken mixture, top with slaw, and finish with your favorite toppings.

7. Serve: Serve hot with lime wedges and a side of chips.
